1. Cut the brie into small pieces, then put all the ingredients - except for the cream and starch - in a saucepan until the brie has largely dissolved.
2. Stir the mixture through a sieve and pour it back into the saucepan.
3. Now mix the cream with the cornstarch and add to the saucepan. Stir well over medium heat until it becomes a creamy sauce.
4. Now the sauce can be used, preferably with my apple tart.
