Instructions

  1. I like to use waxy potatoes, as the puree is a bit firmer than floury ones, so everyone has to discover their preference.
  2. Peel the potatoes and cut into cubes. Cook in salted water for about 15-20 minutes until cooked through. Drain the potatoes.
  3. Heat soy milk and vegetable margarine in the microwave. If you use cold margarine, the puree can become slightly sticky.
  4. Then add the soy milk and margarine to the potatoes and mash them thoroughly.
  5. So that the consistency doesn`t get sticky, don`t pound too long.
  6. If you like, you can add parsley, chives and / or fried onions. Season with salt and nutmeg.
