- I like to use waxy potatoes, as the puree is a bit firmer than floury ones, so everyone has to discover their preference.
- Peel the potatoes and cut into cubes. Cook in salted water for about 15-20 minutes until cooked through. Drain the potatoes.
- Heat soy milk and vegetable margarine in the microwave. If you use cold margarine, the puree can become slightly sticky.
- Then add the soy milk and margarine to the potatoes and mash them thoroughly.
- So that the consistency doesn`t get sticky, don`t pound too long.
- If you like, you can add parsley, chives and / or fried onions. Season with salt and nutmeg.
