  1. Wash the potatoes thoroughly, quarter them lengthways. Heat the oil, fry the potato quarters in it, turning, for about 15 minutes.
  2. Cut the bell pepper lengthways into fine strips.
  3. Press the garlic through the press. Cut the vegetable onion into fine rings.
  4. Add onion rings, paprika strips and garlic to the potatoes about 10 minutes before the end of the cooking time. Season with salt, pepper and a little gyros spice. Pluck the thyme leaves from the stems. Add the herb leaves and olives to the potatoes approx. 3 minutes before the end of the cooking time. Crumble the sheep`s cheese and pour over the potato gyro pan.
