Knead everything (except the walnuts) in the food processor for 5 minutes. Finally, mix in the (preferably roasted) nuts.
Preheat the oven to 50 °, switch it off and cover the dough and let it rise for 45 minutes. Take out, knead briefly (knead in a little flour if necessary).
Shape two baguettes (instructions: Koelkast`s baguette) and place on a baking sheet or wire rack lined with baking paper.
Let rise for another 30 minutes, meanwhile preheat the oven to 225 °, insert the tray / grid, distribute water thoroughly in the hot oven with a flower sprayer (steam) and bake the whole thing on the lowest rail of the oven for about 25 minutes.
I mixed a rather small chilli pepper into the bread dough, you have to try that depending on your taste. The bread is ideal as an accompaniment to cheese or liver pâtés.
