Ingredients

  • 500 g flour, type 1050
  • 1 cube yeast
  • 1 tablespoon sea salt
  • 1 chilli pepper (s)
  • 1 teaspoon sugar, brown
  • 1 egg (s)
  • 1 tablespoon oil, (walnut oil)
  • 300 ml water, lukewarm
  • 150 g walnuts, rouhly chopped

Instructions

  1. Knead everything (except the walnuts) in the food processor for 5 minutes. Finally, mix in the (preferably roasted) nuts.
  2. Preheat the oven to 50 °, switch it off and cover the dough and let it rise for 45 minutes. Take out, knead briefly (knead in a little flour if necessary).
  3. Shape two baguettes (instructions: Koelkast`s baguette) and place on a baking sheet or wire rack lined with baking paper.
  4. Let rise for another 30 minutes, meanwhile preheat the oven to 225 °, insert the tray / grid, distribute water thoroughly in the hot oven with a flower sprayer (steam) and bake the whole thing on the lowest rail of the oven for about 25 minutes.
  5. I mixed a rather small chilli pepper into the bread dough, you have to try that depending on your taste. The bread is ideal as an accompaniment to cheese or liver pâtés.
