Cut the vanilla pod lengthways, scrape out the pulp and add both to the sugar. Mix well.
Bring the water to the boil in a non-stick pan, add the sugar with the vanilla pod and let everything simmer over a low heat for about 10 minutes. Take out the vanilla pod. Peel the peaches, cut into cubes and add to the syrup with a pinch of salt. Let simmer for about 3 minutes. Remove from heat and stir in the butter along with the basil leaves cut into strips. Spread warm on dessert plates and serve immediately with a scoop of vanilla ice cream.
