Instructions

  1. Mix the dressing ingredients in a blender and set aside. Cut the carrots into thin strips with a spiral or julienne peeler and also set aside.
  2. Bring 2 liters of water to a boil without salt in a saucepan. Cook the soba noodles for 4 minutes, drain and rinse with cold water to prevent them from sticking together. Steam the edamame and sugar peas until the sugar peas are cooked through.
  3. Put everything together in a large bowl and mix immediately with the dressing and carrots. Garnish with the sesame seeds.
