- Soak the beans in water overnight. Wash the spinach and cut into small pieces.
- Boil the beans in water for about 30 minutes and then drain them.
- Heat the oil in a saucepan and sauté the onion, fennel, garlic and spinach. Add the half-cooked beans, tomatoes, water, salt and pepper.
- Cook over low heat.
