Instructions

  1. Crumble the yeast and mix with sugar and water. Mix the flour and salt in a bowl. Stir in the yeast mixture and 6 tablespoons of olive oil. Knead well and make a smooth yeast dough. Cover with a damp cloth and let rise in a warm place for about 45 minutes.
  2. Knead the dough briefly again. Dust the work surface with flour and then roll out the dough into an oval shape about 1 cm thick. Use a sharp knife to cut approx. 5 cm long diagonal cross strips into the focaccia. Cover with the cloth and let rise for another 30 minutes. Preheat the oven to 220 ° C.
  3. Cut the onion into fine rings. Top the focaccia with the onion rings and the crumbled goat cheese. Sprinkle with salt and drizzle 4 tablespoons of olive oil on top. Bake on the middle rack for about 20 minutes until golden brown.
