Instructions

  1. Rub the peel of the two lemons and set aside.
  2. Wash the wild garlic leaves thoroughly, pat dry individually with kitchen paper and chop finely.
  3. Mix the soft butter with the lemon peel and the finely chopped wild garlic to a homogeneous mass and season with a pinch of sugar, salt and pepper to taste. Place in the refrigerator for about 1 hour so that the butter can set again.
  4. TIP:
  5. This fine wild garlic and lemon butter goes wonderfully with grilled food, but also with poultry and fish from the pan.
  6. I would NOT heat the wild garlic and lemon butter in the pan, otherwise the wild garlic quickly tastes bitter.
  7. So always only serve with the fully cooked meat.
