Wash the wild garlic leaves thoroughly, pat dry individually with kitchen paper and chop finely.
Mix the soft butter with the lemon peel and the finely chopped wild garlic to a homogeneous mass and season with a pinch of sugar, salt and pepper to taste. Place in the refrigerator for about 1 hour so that the butter can set again.
TIP:
This fine wild garlic and lemon butter goes wonderfully with grilled food, but also with poultry and fish from the pan.
I would NOT heat the wild garlic and lemon butter in the pan, otherwise the wild garlic quickly tastes bitter.
