Ingredients
- 250 g butter, soft (Irish is best)
- 1 bunch wild garlic
- 2 lemon (s), the grated zest it
- sugar
- salt and pepper

- Rub the peel of the two lemons and set aside.
- Wash the wild garlic leaves thoroughly, pat dry individually with kitchen paper and chop finely.
- Mix the soft butter with the lemon peel and the finely chopped wild garlic to a homogeneous mass and season with a pinch of sugar, salt and pepper to taste. Place in the refrigerator for about 1 hour so that the butter can set again.
- TIP:
- This fine wild garlic and lemon butter goes wonderfully with grilled food, but also with poultry and fish from the pan.
- I would NOT heat the wild garlic and lemon butter in the pan, otherwise the wild garlic quickly tastes bitter.
- So always only serve with the fully cooked meat.
