Instructions

  1. Boil the potatoes, peel them and press them through a potato press.
  2. Wash the wild garlic and chop very finely.
  3. Knead all ingredients, shape into a roll, cut into 20-25 slices.
  4. Flour the worktop and hands. Shape the dough into finger-thick cigars.
  5. Simmer the potato noodles in salted water for about 8 minutes. Skim off, put off done
  6. Either serve immediately as a side dish or as a main course - in this case, gently warm it up in butter. Serve with roasted wild garlic leaves cut into strips and freshly grated parmesan.
  7. Remarks:
  8. Instead of fresh wild garlic you can also use wild garlic paste (recipe in my profile), approx. 2 tablespoon. In this case, reduce the salt. The quantities given depend on hunger and intended use. The potato noodles can be frozen very well. Simply frozen in boiling water for a few minutes.
