In the meantime, cut the wild garlic into small pieces and set aside a little for garnish.
When the soup has boiled, add the wild garlic and let it steep for 7 minutes at a low temperature. Season to taste with the spices. Finally, froth the soup with a hand blender.
Fill into glasses, cups or plates, garnish and serve.
Tip: Smoked salmon strips, fried prawns or just toasted bread taste great in this soup.
