Instructions

  1. Cut the butter into small pieces. Knead together with the flour, brown sugar, salt, 1 egg yolk and 1 tablespoon water to form a dough. Wrap the dough in cling film and let it rest in the refrigerator.
  2. In the meantime, grease the springform pan with butter. Peel and core the apples and cut into thin slices. In a large bowl, mix the apple slices with the lemon juice, 2 tablespoons of sugar, cinnamon and raisins.
  3. Preheat the oven to 175 degrees (convection 160 degrees). Roll out 2/3 of the dough on a work surface so that the bottom and edge of the springform pan are covered (the edge may be approx. 4 cm high). Pour in the apple mixture and smooth it out.
  4. Shape the rest of the dough into 10 long rolls (approx. 2 - 3 cm thick) and use the strips of dough to make a braid on the cake. Beat the second egg yolk with 1 tablespoon of milk with a fork and use it to spread the dough. Scatter the sliced almonds on top.
  5. Bake the cake in the center of the oven for 1 hour 15 minutes until golden brown. Warm from the oven and with whipped cream an absolute holiday cake!
