Peel the carrot and grate finely or coarsely (depending on your taste).
Place the tortilla on release paper and place a handful of rocket in the middle. Place half of the grated carrots on top of the rocket (about the same amount as rocket). Place 3 servings of ricotta on top with a tablespoon and season with salt and pepper.
Roll up the tortilla without the release paper and then wrap it with the release paper.
