Mix the flour, yeast, sugar, cinnamon and vanilla flavor carefully. Add soy milk or soy cuisine (or other milk) and stir well with a hand mixer. Let rise in a warm place for 15 minutes (cover the bowl with a damp cloth).
Caution: The dough must not be too thick. It is optimal when it is semi-liquid. The pancakes are baked on both sides in a pan with a little hot oil until they are crispy brown.
These pancakes can also be topped with various types of fruit during baking, e.g., apples, plums. Or brush with jam, plum sauce or applesauce after baking. It can be served warm or cold.
