Mix 5 tablespoon flour, crumbled yeast, sugar and up to 125 ml water in a bowl. Let rise in a warm place for 30 minutes.
Sift the rest of the flour mixed with the salt over it. Knead everything into a firm dough. Shape into a ball and let rise under a cloth for another 30 minutes.
Fold the dough through again. Form a roll 3-4 cm in diameter. Cut 3 cm thick slices from it and form balls by pressing the outside inwards so that the smooth cut surface forms a flawless top.
Place seven balls in a circle on a floured baking sheet. Brush with water and sprinkle with the various ingredients. Let rise for a good 45 minutes.
Bake at 220 degrees for about 35 minutes. Brush again immediately.
