Instructions

  1. Soak gelatine in cold water for approx. 10 minutes according to the instructions on the package.
  2. In the meantime, mix the yoghurt with the sugar, lemon juice, lemon zest and vanilla sugar well.
  3. Squeeze out the gelatine and carefully melt it in the microwave or in a saucepan. Add a few tablespoons of yoghurt and stir well. Gradually add the rest of the yogurt until everything is well mixed. Put the yoghurt mixture in a cool place until it starts to gel. Then whip the cream until stiff and fold in carefully.
  4. Fill into small molds (approx. 2 dl each) and refrigerate for at least 2 hours.
  5. For the fruit sauce, peel the kiwi fruit and puree with the water and sugar.
  6. Turn the Köpfli out onto a plate and decorate with the fruit mirror.
  7. DANGER:
  8. Add the kiwi puree to the Köpfli just before serving.
  9. Tip for peeling kiwis:
  10. Halve the kiwi fruit and use a large spoon to remove the pulp from the edge of the peel.
  11. Fruit level variant:
  12. A mango can also be used instead of a kiwi. The amount of water and sugar may then have to be adjusted. A mirror made from strawberries or blueberries is also recommended. Since also adjust the amount of water and sugar depending on the situation.
