Ingredients
- 400 g yourt
- 50 grams sugar
- 4 sheets gelatin
- 4 tablespoon lemon juice
- 2 tablespoon lemon peel
- 1 packet vanilla sugar
- 200 ml cream
- 4 kiwi (s)
- 3 tablespoons water
- 1 tablespoon sugar, (or )

- Soak gelatine in cold water for approx. 10 minutes according to the instructions on the package.
- In the meantime, mix the yoghurt with the sugar, lemon juice, lemon zest and vanilla sugar well.
- Squeeze out the gelatine and carefully melt it in the microwave or in a saucepan. Add a few tablespoons of yoghurt and stir well. Gradually add the rest of the yogurt until everything is well mixed. Put the yoghurt mixture in a cool place until it starts to gel. Then whip the cream until stiff and fold in carefully.
- Fill into small molds (approx. 2 dl each) and refrigerate for at least 2 hours.
- For the fruit sauce, peel the kiwi fruit and puree with the water and sugar.
- Turn the Köpfli out onto a plate and decorate with the fruit mirror.
- DANGER:
- Add the kiwi puree to the Köpfli just before serving.
- Tip for peeling kiwis:
- Halve the kiwi fruit and use a large spoon to remove the pulp from the edge of the peel.
- Fruit level variant:
- A mango can also be used instead of a kiwi. The amount of water and sugar may then have to be adjusted. A mirror made from strawberries or blueberries is also recommended. Since also adjust the amount of water and sugar depending on the situation.
