Put the ingredients for the dough in a bowl, knead with the mixer with dough hook to a smooth dough and let rise for 20 minutes at room temperature.
In the meantime, mix all the ingredients for the sauce in a small bowl and cut the olives, mushrooms and chorizo.
Preheat the oven to 200 degrees. Cover a large, flat tray with baking paper and brush with a little olive oil.
Cut the dough into 20 equal portions, knead each one individually into a ball shape and press flat. Place the dough pieces in 4 x 5 rows on the baking sheet and let rest for 5 minutes.
Spread the sauce on the mini dough pieces, cover each with 2 olive halves, 1 chorizo slice, 2 mushroom slices and a pepper and sprinkle with 1 tablespoon grated Parmesan.
Bake in the oven for about 25-30 minutes. Remove and let cool, then stick to the bread with a skewer in the shape of a hedgehog.
