Ingredients

For the dough:

  • 300 g wheat flour
  • 1 teaspoon salt
  • 0.5 teaspoon ½ rosemary
  • 0.5 teaspoon ½ chilli flakes
  • 1 pack dry yeast
  • 150 ml water, lukewarm

For the sauce:

  • 150 ml tomato puree
  • 1 clove (s) garlic, crushed or finely grated
  • 2 tablespoon ketchup
  • 1 teaspoon paprika powder, hot pink
  • 0.5 teaspoon ½ oregano
  • 1 tablespoon olive oil
  • Olive oil for the sheet

For covering:

  • 20 Kalamata olives, halved
  • 20 hot peppers, Greek
  • 20 slices chorizo
  • 10 mushrooms, sliced
  • 20 tablespoon parmesan, grated

Also:

  • 1 bread, round, to serve
  • 20 wooden skewers

Instructions

  1. Put the ingredients for the dough in a bowl, knead with the mixer with dough hook to a smooth dough and let rise for 20 minutes at room temperature.
  2. In the meantime, mix all the ingredients for the sauce in a small bowl and cut the olives, mushrooms and chorizo.
  3. Preheat the oven to 200 degrees. Cover a large, flat tray with baking paper and brush with a little olive oil.
  4. Cut the dough into 20 equal portions, knead each one individually into a ball shape and press flat. Place the dough pieces in 4 x 5 rows on the baking sheet and let rest for 5 minutes.
  5. Spread the sauce on the mini dough pieces, cover each with 2 olive halves, 1 chorizo slice, 2 mushroom slices and a pepper and sprinkle with 1 tablespoon grated Parmesan.
  6. Bake in the oven for about 25-30 minutes. Remove and let cool, then stick to the bread with a skewer in the shape of a hedgehog.
  7. Great for buffets and parties.
