Ingredients
- 2 ½ kg potatoes, waxy
- 3 bulbs garlic
- 0.5 ½ cup olive oil
- 3 lemon (s)
- 2 tablespoon paprika powder, noble sweet
- 1 tablespoon oregano, dried
- 1 teaspoon pepper
- 1 teaspoon chilli flakes
- sea-salt
- 200 ml water

- Peel the potatoes, quarter them long ago and rinse well twice with water to wash off the starch. Place 35 x 25 cm in a 5 cm deep tray. Peel the garlic and add the whole cloves to the potatoes.
- Preheat the oven to 200 degrees.
- Add the zest of one lemon and the juice of 3 lemons as well as the oil, salt and all the spices and stir thoroughly so that everything is dispersed. Let the water flow in from the side, not over the potatoes, and slide the tray into the oven. Bake for approx. 60 - 70 minutes until golden brown and crispy. In between, after 45 minutes, take the tray out briefly and stir the potatoes.
- Of course you can also bake a fried chicken, but I think this recipe is also simply a pleasure on its own. I like to make myself a green salad and a chilli liquor. Or a delicious crusty white bread on which I then spread the soft, caramelized garlic. The imagination knows no limits!
- At family celebrations, this is a common accompaniment to all kinds of dishes. And if you are not so garlic resistant, you can of course reduce it or leave it out.
