Instructions

  1. Clean, wash and roughly grate the zucchini. Mix the flour, baking powder, salt and pepper in a bowl, add the zucchini grated and the feta cheese and mix. To press a hollow in the middle. Mix eggs with milk and oil and pour into the hollow.
  2. Mix everything quickly with a fork to form a dough. It should still be a little lumpy.
  3. Preheat the oven to 180 degrees. Pour the batter into the greased and floured muffin tin and bake for about 25 - 30 minutes until golden. Let the muffins cool in the tin for 5 minutes and then remove them. They taste best lukewarm.
