- Cut the cleaned mushrooms into thin slices. Wash the zucchini, cut off the ends, cut into slices that are not too thick. Dice the peeled onion.
- Finely chop the chives and parsley.
- Heat some oil in a pan. Fry the onion, zucchini and mushrooms in it.
- In the meantime, whisk the eggs with milk, stir in chives and parsley. Salt and pepper the egg mixture vigorously.
- Put the fried vegetables in a baking dish and pour the egg mixture over them. Heat in the oven at approx. 200 degrees until the mixture has thickened.
