  • 1 zucchini
  • 100 g mushrooms
  • 1 onion (s)
  • 150 ml milk
  • chives
  • 2 sprigs parsley
  • salt
  • pepper
  • oil

Zucchini – Mushrooms – Omelette

Instructions

  1. Cut the cleaned mushrooms into thin slices. Wash the zucchini, cut off the ends, cut into slices that are not too thick. Dice the peeled onion.
  2. Finely chop the chives and parsley.
  3. Heat some oil in a pan. Fry the onion, zucchini and mushrooms in it.
  4. In the meantime, whisk the eggs with milk, stir in chives and parsley. Salt and pepper the egg mixture vigorously.
  5. Put the fried vegetables in a baking dish and pour the egg mixture over them. Heat in the oven at approx. 200 degrees until the mixture has thickened.

  7. Serve with a refreshing cucumber and yogurt salad.
