Peel and chop the garlic, mix the peanut butter, soy sauce and the chopped ginger to a smooth mass. Squeeze the lemon and add the juice to the sauce, season with chilli flakes.
Wash the zucchini and carrots and use a spiral cutter to make noodles. Wash the peppers and cut into very thin strips. Wash the spring onions and cut into thin rings. Heat the peanut oil in a pan and heat the zucchini, carrots, bell pepper and spring onions for about 3 minutes. Then add the peanut sauce and continue heating for 3 minutes.
