Wash the zucchini, cut in half and cut into slices. Heat the coconut oil in a pan and fry the zucchini slices in it.
In the meantime, cut the mozzarella into cubes, quarter the tomatoes and cut the basil into small pieces.
When the zucchini slices are fried, add salt and pepper as needed. Beat the egg in the pan, stir and mix in the diced cheese. Place on the plate, sprinkle with the cold tomatoes and basil and serve.
