Instructions

  1. Peel and finely chop the shallot. Rinse the thyme, spin dry and chop. Rinse the oregano, spin dry and chop. Wash and clean the zucchini and use a peeler to slice or slice them lengthways into thin strips.
  2. Mix the minced meat, shallot, oregano, thyme, breadcrumbs, egg and a little salt and pepper into a minced mixture. Lay out 2 by 2 strips of the zucchini crosswise and put some of the minced mixture in the middle. Then fold the zucchini strips up, press down a little and seal with toothpicks.
  3. Put the tomatoes in a baking dish, season with salt and pepper and then place the courgette parcels in the dish.
  4. Cook the rice in salted water according to the instructions on the packet.
  5. Put the baking dish in the preheated oven and let the parcels cook for about 30 minutes at 180 degrees.
  6. Arrange the rice on plates, pour the tomato sauce over it and place a few courgette parcels on top.
