Peel and dice onion and garlic and sauté in olive oil. Add the rice and fry. Add the curry and turmeric and sauté briefly. Deglaze with the vegetable stock and cook covered for about 15 minutes.
In the meantime, clean the peppers and cut into small cubes. Also cut the zucchini into small cubes. First add the pepper cubes and cook for another 5 minutes. Finally add the zucchini cubes and actually just warm them up.
The crunchy vegetables are fun to bite into. Season everything with salt and pepper and then serve.
