Instructions

  1. Heat 1 tablespoon olive oil in a pan (if possible with a coated layer) and sauté the zucchini and onion over low heat. Season to taste with salt and pepper, then remove from heat and let cool down.
  2. Make a marinade from 1 tablespoon olive oil, lemon juice, salt, pepper, garlic and parsley.
  3. Arrange the salad on a large plate as follows (a large plate or casserole dish also works): First, spread the zucchini and onion mixture and then the tomato slices. Cover everything with the mozzarella slices. Place in a cool place and drizzle with the marinade just before serving.
