Cut the zucchini into slices about 15 mm thick, fry quickly on both sides in hot olive oil, season with salt and pepper. They shouldn`t be done yet, but should already be browned.
Divide the cheese into 4 cm wide strips, cut in half crosswise, then cut into oblong triangles.
Mix the oil with the herbs and garlic and marinate the cheese triangles in it for 1-2 hours.
Place a cheese triangle on each of the zucchini slices, place the slices in an ovenproof dish and sprinkle with the marinade.
Bake at 250 degrees for about 10-12 minutes until the cheese turns brown. Stick an olive with a stick on each. Tastes warm and cold.
