Instructions

  1. Mince roughly half the garlic head. Combine this minced garlic with salt, paprika, and black pepper.
  2. Cut the chicken along the breast to open it like a book. Cover with foil and pound until flattened.
  3. Rub both sides of the chicken thoroughly with the spice mixture.
  4. Heat the olive oil in a large pan over low heat.
  5. Place the flattened chicken skin-side down in the pan.
  6. Place a plate (slightly smaller in diameter than the pan) on top of the chicken. Set a 3-liter jar filled with water on the plate as a weight.
  7. Cook over low heat for 30 to 40 minutes.
  8. Flip the chicken and cook for another 30 to 40 minutes until the internal temperature reaches 74 °C (165 °F).
  9. While cooking, blend the parsley with the remaining minced garlic using a blender, adding the 2 tbsp of boiled water to create a sauce.
  10. Transfer the cooked chicken to a serving plate and brush generously with the parsley-garlic sauce.
