Ingredients

  • 2 eggplant (s), sliced or diced
  • 0.25 ¼ cup vinegar
  • 0.25 ¼ cup soy sauce
  • little salt
  • 0.5 teaspoon ½ pepper
  • 4 cloves garlic, crushed
  • 4 tablespoon oil for frying

Instructions

  1. Fry the aubergines in hot oil on all sides, remove and place on kitchen paper.
  2. Pour off the excess oil, add the remaining ingredients to the pan and simmer for about 5 minutes. Add the fried aubergines and simmer for another 7 minutes, turning / stirring in between.
  3. My cup has about 150 ml. It says so much oil because the eggplants absorb so much oil.
  4. Tip:
  5. Also tastes good with green beans or okra pods instead of eggplant. It is then called: Adobong Abitsuelas or Adobong Okra.
  6. Simply boil the 500g beans / okra for 5 minutes in hot water, drain, fry briefly in the pan and simmer with the other ingredients for about 8 minutes.
  7. You can also vary the amount of soy sauce and vinegar according to your taste.
