Ingredients

  • 1 can artichoke hearts, (drained 240 g)
  • 3 tablespoon olive oil
  • 1 clove garlic
  • 0.5 ½ lemon (s), organic
  • some sugar, (1/4 - 1/2 teaspoon)
  • 1 tablespoon mint, chopped fresh
  • salt
  • Pepper, black, freshly ground

Instructions

  1. Drain the artichokes well upside down on kitchen paper and cut in half crosswise. Grate the zest of half a lemon and squeeze out the juice.
  2. Fry the artichokes in 2 tablespoons of olive oil for about 3 - 4 minutes until they are a little brown. Turn, then add the squeezed garlic, sugar, lemon zest and mint and fry for another 2 minutes. Pour into a tapas bowl. Put 1 - 2 tablespoons of lemon juice in the warm pan along with the rest of the olive oil. Season with salt and pepper and pour over the warm artichokes.
  3. Let it steep for a few hours in a cool place.
  4. The amount is enough for 4 people if several tapas are offered.
