Ingredients

  • Pumpkin – 200-300 g
  • Bulgarian red pepper – 200 g
  • Potatoes – 180 g
  • Onions – 100 g
  • Milk – 100 ml
  • Egg – 1 pc.
  • Hard cheese – 50 g
  • Vegetable oil – 1-2 tbsp
  • Fresh parsley – 2-3 sprigs
  • Ground black pepper – to taste
  • Salt to taste

Instructions

  1. We prepare the necessary products. You will need foil during the cooking process.
  2. We peel all vegetables. We turn on the oven to heat up to 220 degrees.
  3. Cut the pumpkin into strips.
  4. Cut the pepper into arbitrary pieces.
  5. Cut the potatoes into cubes.
  6. Cut the onion into thin strips.
  7. Combine vegetables in a bowl, salt, and pepper.
  8. Beat the egg and milk lightly with salt.
  9. Grease the baking dish with vegetable oil.
  10. Put the prepared vegetables in a mold.
  11. Fill with the egg-milk mixture.
  12. Cover the form with foil and send to the oven for 45 minutes.
  13. Rub the cheese on a fine grater.
  14. We take out the form from the oven and remove the foil.
  15. Sprinkle vegetables with grated cheese and return the dish to the oven for 2-3 minutes.
  16. The pumpkin, pepper, and potato casserole is ready. Serve sprinkled with chopped parsley.
