Chakhan, or more precisely chahan, is a Japanese dish, a kind of pilaf in which rice is combined with vegetables, eggs, ham, herbs. There are many “oriental” recipes for preparing rice, as well as serving it. This recipe is based on the chahan dish.

Ingredients
Rice – 120 g
Ham – 120 g
Eggs – 2 pcs.
Carrots – 0.5 pcs.
Bulb onions – 0.5 pcs.
Green onions – 2 pcs.
Refined sunflower oil – 30 ml
Salt to taste
Ketchup (for serving) – to taste
Soy sauce (for serving) – to taste
Directions
Prepare all the ingredients you need.
Rinse the rice, add to salted boiling water (0.5 l) and cook until tender. The cooking time will depend on the type of rice. Throw the cooked rice in a colander, rinse and transfer to a deep bowl or saucepan.
Peel the onions and carrots. Cut the onion into small cubes, grate the carrots on a coarse grater.
Fry the onions and carrots in a skillet with a little sunflower oil. Fry vegetables over low heat, they should be soft, but not dry out.
In a bowl, combine two eggs with salt and beat lightly with a fork.
In a skillet with a little oil, fry the omelette over high heat, stirring constantly and not letting it cook.
Add vegetables (onions with carrots) and omelet to the rice.
Cut the ham into strips.
Fry the ham in oil for a few minutes over high heat.
Add ham and chopped green onions to the rice.
Toss the rice with egg, ham, vegetables, and green onions.
Chakhan is ready to serve. Serve extra ketchup and soy sauce.
