When I lived in Nebraska, I often visited a Mexican bakery near my work to get pastries, so then I bought churros occasionally. Although I love churros, I’ve never had the motivation to make them because the process takes a long time. So when I found churro waffles I was very excited. I can finally make churros without deep frying or piping bags! These churro waffles are an unforgettable treat along with the thick chocolate sauce!

Ingredients
Churro wafers:
Butter – 110 g (plus some butter to grease waffles and waffle iron)
Water – 240 ml
Sugar – 3 tablespoon.
Salt – 1 teaspoon.
Flour – 120 g
Eggs – 4 pcs.
Topping:
Sugar – 55 g
Cinnamon – 1 tablespoon.
Chocolate sauce:
Chocolate – 100 g
Cream (35%) – 100 ml
Directions
Place the butter, water, sugar, and salt in a saucepan and heat over medium heat stirring occasionally until the butter dissolves and the mixture boils.
Reduce the heat down to low, add all the flour into the saucepan, and stir the mixture quickly until a ball of dough forms.
Cook the dough for 1-2 minutes pressing it to the bottom of the saucepan, mixing, and pressing it again to the bottom.
Remove the saucepan from the heat and put the dough into a bowl. Allow it to cool down for 5 minutes.
Whisk 4 eggs.
Add a quarter of the egg mixture to the dough and mix it all together. You can use a mixer. The dough will separate at first but then come back together again.
Add the remaining egg mixture in several batches. The dough should be soft with a silky texture and stick to a spoon without falling off it. If the dough becomes more liquid, do not add all of the egg mixture.
Preheat the waffle iron. Mix the sugar and cinnamon on a plate and melt the butter to coat the cooked waffles in (about 1-2 tablespoons).
Grease the waffle iron slightly with the butter. Place half a cup of batter in the center of the waffle iron and spread the batter in a circle. Close the waffle iron and let the waffles cook. The waffles will be done when they get a brown color and steam stops coming out of the waffle iron. This usually takes 4-6 minutes.
Put the cooked waffle from the waffle iron to a plate, grease it with some butter on all sides and then coat it in the sugar and cinnamon mixture.
Do the same with the remaining batter.
To make the chocolate sauce, place the chocolate in a heatproof bowl. Heat up the cream on the stove or in the microwave and pour it over the chocolate. Cover the bowl and leave it for one minute, and then mix it completely.
