Ingredients

  • 2 egg (s)
  • 2 egg yolks
  • 0.25 teaspoon ¼ baking powder
  • 1 pinch (s) salt
  • 0.5 ½ orange (s), juice and grated zest
  • 500 g flour, possibly only 400
  • Oil, (sunflower oil) for deep-frying
  • syrup
  • 500 g honey (from thyme flowers)
  • 125 g suar
  • 250 ml water
  • Cinnamon and
  • Walnuts, roughly grated, for sprinkling

Instructions

  1. Using the stand mixer, beat the eggs, egg yolks and BP for 20 minutes. Without interrupting the stirring, you now add the zest and the juice of the orange. Then add the flour and knead until a medium-firm dough is formed.
  2. Divide the dough into two portions and let it rest in the refrigerator - wrapped in cling film - for 2-3 hours.
  3. Then you put some flour on the work surface as well as on your hands and with the help of a thin roller you roll out the dough into a thin sheet (Gr.Fylo) (if the dough is sticky, never add flour, just use your hands and Flour work surface).
  4. Use a dough cutter to cut the dough into strips approx. 6 cm wide and 15 cm. Cut the length, twist it around a fork and dip it in the frying oil. Deep fry until the dipla rises and turns golden.
  5. Repeat the same with all strips. Place on kitchen paper so that excess oil is sucked away.
  6. Cook a medium-strength syrup from the syrup ingredients (approx. 8 min. On medium-low heat), let it cool and pour over the cooled diples. Sprinkle the diples with the walnuts and possibly also with the cinnamon.
