Instructions

  1. Mpriki is the special vessel in which Elliniko kafe is prepared because it is the right one
  2. Has size (you get with the Greeks). If necessary, you can also use the smallest pot you have at home.
  3. Put the water and sugar in the mpriki and place on the stove. It is better to use a mini gas cooker because this is the fastest way and saves energy. You can buy it cheaply from the Greeks, but if you don`t have one, you have to be a little more patient.
  4. Turn the stove on to medium to high flame and dissolve the sugar in the water. Add the coffee and stir only briefly, it should not dissolve completely, the heat will now do the work.
  5. Be sure to stop at the coffee and make sure that it does not simmer. Very important!
  6. As soon as the first boiling bubble rises, pull the Elliniko off the fireplace immediately.
  7. The Elliniko is traditionally served with a Voutimataki (something small to dip)!
  8. You can also prepare it straight without sugar.
