Fried Eggs with Bacon and Onions on a Finnish Candle

I really love to escape from the city to nature, whether it is a walk in the forest, a trip to the country house or a camping trip. In this recipe, I went with friends to the lake for a few days and cooked eggs, bacon, and onions there on a real Finnish candle!

Ingredients

  • Eggs – 8 pcs.
  • Raw smoked bacon – 150 g
  • Bulb onions – 2 pcs.
  • Green onions – 5 pcs.

Directions

  1. Chop the bacon. I prefer to use vacuum-packed raw smoked bacon. Its weight is 150 grams. This, of course, is a lot, but scrambled eggs are prepared by far more than one person. Cut the bacon into oblong rectangles. Take 2 onion heads, peel, and cut into half rings. Chop the green onion for a beautiful presentation. I use 5 pieces. I think this will be enough.
  2. After everything is cut, you need to make a fire. In my case, it will be a Finnish candle. To make a Finnish candle, we split the log into 8 segments, but not completely. In the segments of the log, after one, we drive four nails to install the pan.
  3. Place the cast iron pan on the Finnish candle. Put the bacon in a still cold frying pan so that it warms up evenly with the frying pan and the fat melts out of it, on which the scrambled eggs continue to be pressed. By the time the bacon is fried for about 10 minutes.
  4. Remove the fried bacon from the pan. Put the onions in the pan and fry them in the fat melted from bacon. When the onion is slightly fried, return the bacon to the pan, mix it with the onion. Drive eggs into the mixture. The number of eggs is considered from the number of people. I cooked for 4 people, so I used 8 eggs.
  5. We leave the scrambled eggs on fire until completely cooked. I will not indicate the time intervals, because a lot depends on the heat of your fire. Once the protein has set, the eggs are completely cooked. At the end of cooking, remove the scrambled eggs, bacon, and onions from the heat and garnish with green onions.
