Ingredients

  • 1 packet glass noodles
  • 300 g beef, or turkey meat
  • 1 medium onion (s), diced into small pieces
  • 1 medium carrot (s), finely grated
  • 1 small aubergine (s), finely diced
  • 1 small zucchini
  • 1 clove garlic, pressed
  • 4 tablespoon soy sauce
  • 1 teaspoon vinegar essence
  • some tomato paste
  • some salt and pepper

Instructions

  1. Soak the glass noodles in cold water for 10 minutes. When they are soft, you can use scissors to cut them into 5 cm long pieces. Then place in boiling water for a minute, not longer, drain and transfer to a large bowl.
  2. The order now is very important, only then does it taste really good:
  3. Cut the meat into small pieces. Fry briefly in a hot, large pan with oil, then add the vegetables and fry for about 5 minutes.
  4. Mix the soy sauce with the tomato paste, the vinegar, a little water, salt and pepper in a bowl, pour into the pan and stir well. Set the stove a little smaller and let it simmer for 10-15 minutes. If it seems a little too dry, add a little water, but please be careful not to make a soup. Only add the garlic at the end and only sauté briefly.
  5. The contents of the pan are now mixed with the glass noodles. Although it smells and tastes so good warm, you should be patient, because in my opinion this glass noodle salad tastes best cold. It is easy to prepare and can be kept in the refrigerator for a good 3 days.
