Ingredients

  • 250 g minced meat (beef or beef + lamb)
  • 4 m. Eggplant (s)
  • 1 can tomato (s) (pizza tomatoes), 400 g
  • 4 peppers, green, mild, possibly 1 hot
  • 2 clove (s) garlic, finely chopped
  • 1 medium onion (s), finely diced
  • 1 tablespoon tomato paste
  • 1 tablespoon oil
  • 0.5 ½ bunch parsley, smooth, finely chopped
  • 100 ml water
  • Salt and pepper, pepper
  • Oil, for deep-frying

Instructions

  1. For the filling:
  2. Do not sear the minced meat too hot in a little oil. Add the onion, peppers and garlic and sauté briefly. Now add the pizza tomatoes, water and tomato paste to the pan. Add salt and pepper, mix everything together well and simmer in a closed saucepan for about 10 minutes. (Consistency must be like a Bolognese. Rather less runny.) If the filling should be too runny, let the lid cook briefly so that the liquid evaporates. At the end, add the parsley and set the filling aside.
  3. Eggplant:
  4. Heat about 1 liter of oil in a saucepan and fry the aubergines for two minutes each. Place on kitchen paper and let cool down a little. The eggplants must be fried whole. (You can also cut them in half lengthways and then deep-fry them, but they`ll absorb too much fat)
  5. When frying whole, there is a risk that the aubergines will burst. To prevent this, the following tips:
  6. - Do not heat the oil too much (so that the eggplants sizzle easily)
  7. - Poke a few holes in the aubergines beforehand
  8. - If they get too plump when frying, take them out for a short time and then put them back into the frying fat.
  9. Cut the aubergines lengthways and unfold them. Place on a baking sheet, lightly salt and spread the filling over the aubergines. If desired, whole cloves of garlic can now be put into the filling. Fill the tray with water until the bottom is just covered.
  10. Place in the oven at 200 to 220 ° C until lightly browned. (Experience has shown that approx. 30 min.)
  11. It goes well with rice or crispy flat bread warmed up in the oven.
