Ingredients

  • 300 g white bread, stale, cut into small pieces
  • 250 ml milk, lukewarm
  • 300 g Emmentaler or Gouda, diced into small pieces
  • 1 shallot (s), finely chopped
  • 1 tablespoon butter
  • 1 tablespoon flour
  • 3 egg (s)
  • 2 tablespoon chives rolls
  • salt
  • 80 g butter
  • 70 g parmesan, freshly rated

Instructions

  1. Mix the bread and milk, fold in the cheese cut into small cubes.
  2. Sweat the shallot in butter until translucent and add to the bread mixture with the flour (I also add 2 - 3 tablespoons of breadcrumbs), eggs, chives and a little salt. If the bread dough is too dry, add a little more milk. Mix well and form approx. 10 oval dumplings.
  3. Cook gently in salted water for about 15 minutes.
  4. Serve with melted butter and sprinkled with parmesan.
  5. Tip: I put the dumplings in the microwave with very little water and cook them for 1 minute per dumpling at 750 watts.
