Ingredients

  • 700 ml water
  • 12 g konbu (seaweed)
  • 15 g bonito flakes (katsuo)

Instructions

  1. Wipe the Konbu briefly with kitchen paper. Put the Konbu in a saucepan, pour in water and ideally leave it to stand overnight (at least 30 minutes).
  2. Bring the contents of the pan to a boil over medium heat (without the lid).
  3. Just before the water boils, take the konbu out of the pot. Do not let it boil, otherwise the broth will taste bitter.
  4. Turn the heat down, add the bonito flakes to the pan and bring to the boil for 1-2 minutes.
  5. If necessary, skim. &
