Ingredients

  • 2 kohlrabi
  • 80 g soy ranules
  • 1 onion (s)
  • 1 carrot (s)
  • 1 can pizza tomatoes, 400g
  • 1 tablespoon tomato paste
  • salt and pepper
  • oregano
  • possibly harissa or chili powder
  • 30 g parmesan cheese

Instructions

  1. Soak soy granules in boiling broth for 10 minutes and squeeze out well. Then proceed as you would with normal minced meat, i. H. Sear them well and season properly (soy has to be well seasoned!). Add onion cut into cubes. Add the finely grated carrot and stir in the tomato paste. Sweat briefly and then deglaze with the tomatoes. Season to taste with oregano and simmer for a few more minutes. If you like, you can also add some harissa or chili.
  2. Peel the kohlrabi and cut into fine strips with a peeler. Cook these in boiling broth for about 7 minutes. Drain the kohlrabi and then serve with the sauce and parmesan.
