Ingredients

  • 1 kg zucchini, the small, light green ones
  • 3 tablespoon tomato paste
  • 4 tablespoon oil
  • 2 clove (s) garlic, crushed
  • 1 teaspoon mint, dried
  • salt and pepper
  • 2 liters water

For the filling:

  • 1 kg minced meat
  • 2 onion (s), finely diced
  • 100 g pine nuts
  • 1 teaspoon cinnamon
  • salt and pepper

Instructions

  1. Hollow out the zucchini completely with an apple core and set aside.
  2. In the meantime, fry the diced onions and minced meat in a pan. Add pine nuts, salt, pepper and cinnamon and sauté. Put this filling aside as well.
  3. Fill the hollowed out zucchini with the meat filling and fry in a little oil. The zucchinis need to take on some color. Then add the tomato paste to the pot and fill up with water. Add the garlic and mint to the stuffed zucchinis and simmer on medium heat for 1 hour. If necessary, season with salt and pepper.
  4. Rice is served with this dish.
