Ingredients

For the broth:

  • 2 liters water
  • 1 tablespoon salt
  • 2 tablespoon sugar
  • 2 tablespoon soy sauce
  • 2 tablespoon vinegar, preferably rice vinegar
  • 0.5 ½ bunch dill
  • 2 tomato (s)
  • 1 cucumber (s)
  • 2 cloves garlic)
  • 6 radishes
  • 1 dash pepper sauce B. Tabasco

For the insert: (meat insert)

  • 400 g rump steak (s)
  • 2 tablespoon vegetable oil
  • 1 onion (s)
  • 2 cloves garlic)
  • 1 tablespoon soy sauce
  • pepper

For the insert: (vegetable insert)

  • 0.25 ¼ head white cabbage
  • 1 tablespoon soy sauce
  • 1 tablespoon vegetable oil
  • 1 cucumber (s)
  • salt and pepper
  • 0.5 teaspoon ½ paprika, hot pink
  • 1 tablespoon vegetable oil
  • 2 bell pepper (s)
  • 2 chilli pepper (s)
  • 1 tablespoon vegetable oil
  • 1 dash soy sauce
  • 1 eggplant (s)
  • salt
  • 1 tablespoon vegetable oil
  • 1 tablespoon tomato paste or tomato puree
  • Pepper, black

For the insert: (pasta insert)

  • 200 g noodles (somen noodles)
  • salt
  • 1 tablespoon vegetable oil

For the deposit: (pancake deposit)

  • 3 egg (s)
  • 5 tablespoon vegetable oil
  • salt and pepper
  • 2 tablespoon sesame seeds

Instructions

  1. Start with the broth. To do this, dissolve sugar and salt in water. Add the soy sauce and vinegar and season the salt content again. Depending on your taste, a little pepper sauce e.g., Admit Tabasco. If necessary, even more salt can be added.
  2. Peel the cucumber and cut into sticks. Dice the tomatoes. Chop the garlic and dill. Quarter the radishes. Add everything to the broth and let it steep in the fridge overnight.
  3. The next day, cut the beef into thin strips and fry in hot vegetable oil. As soon as it is almost cooked, add the onion cut into rings and the diced garlic and continue to fry until the onion begins to turn translucent. Deglaze everything with soy sauce and pepper. Set the meat aside and, like all other garnishes, chill in the refrigerator.
  4. The vegetable trays can be chosen variably. My selection can be changed or shortened at any time. But cabbage and cucumber are essential.
  5. Cut the white cabbage into thin strips, pour a little soy sauce over them and knead vigorously. Let the cabbage steep for a few minutes, then fry in the hot oil for a maximum of two minutes. The cabbage should still have bite.
  6. Peel the cucumber and cut into sticks. Season the sticks with salt, pepper and paprika powder. Add a little vegetable oil, mix well and just let it steep.
  7. Clean the bell pepper and chili peppers and cut into strips. If you can`t find hot chili peppers, you might as well use chili flakes. Using the already known method, sear the pods for two minutes and season with a dash of soy sauce. Chill the pods as well.
  8. Peel the eggplant. You can also leave a few strips of peel standing. Cut the aubergine into sticks, season with salt and let it steep for a quarter of an hour. Then fry the sticks in the hot vegetable oil for just under five minutes. The pins should still keep their shape. Just before the end, mix in the tomato paste or the strained tomatoes and season with pepper. Also set the aubergine aside and let it cool down.
  9. Cook the somen noodles in salted water according to the instructions on the packet. Usually this only takes two to three minutes. Drain the noodles and turn them in a little vegetable oil so that they stick a little less together. You can also use spaghetti or glass noodles. Both alternatives should then be shortened in length.
  10. The egg component is now missing. Mix the eggs well with the vegetable oil, season with salt and pepper. Fry the mixture into thin pancakes. To be on the safe side, add a little oil to the pan when frying to prevent the pancakes from sticking. If enough oil has been stirred into the eggs, you can fry without oil. At least for me it didn`t work with the turning. Let the pancakes cool, roll up and cut into thin strips.
  11. Roast two tablespoons of sesame seeds in a pan without oil.
  12. The serving can begin. It is typically served in large soup bowls. First place a portion of pasta at the bottom. Then in turn arrange a spoonful of the cabbage, cucumber, peppers, and eggplant. Put a serving of beef in the middle and a few pancake strips on top to top it off. Now pour in enough stock to just barely reach the top layer. Sprinkle some sesame seeds over the kuksi before serving.
  13. Because of the many components, the dish sounds more complicated than it actually is to prepare. In addition, everything can be prepared excellently and then only has to be arranged in the soup bowls.
