Ingredients

  • 1 cucumber (s)
  • 1 bunch spring onion (s)
  • 1 tablespoon rice vinegar
  • 1 teaspoon ginger root
  • 2 teaspoon soy sauce, Japanese
  • 2 teaspoons sugar
  • some sesame, white
  • some sesame, black
  • some spice mixture (Shichimi Togarashi)
  • a bit salt

Instructions

  1. Wash and peel the cucumber. Cut or slice into thin slices and season with plenty of salt, set aside in a colander for about 20 minutes. Then wash off the salt under running water and squeeze out the cucumber slices or spin dry.
  2. Peel the ginger and grate finely. Mix together the rice vinegar, soy sauce, ginger and sugar and mix with the cucumber slices. Clean the spring onions, cut into fine rolls and add to the salad.
  3. Lightly toast the black and white sesame seeds in a dry pan and sprinkle with shichimi togarashi over the salad if you like.
