Ingredients

  • 500 g beef
  • 4 tablespoon oil
  • 1 large vegetable onion (s)
  • 3 tomato (s)
  • 3 large potatoes
  • 1 chilli pepper (aji)
  • 2 tablespoon vinegar red wine vinegar
  • 2 tablespoon red wine
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 2 cloves garlic)
  • Oil, for deep-frying

Instructions

  1. Chop the beef (approx. 2.5 x 1 cm). Wash and peel vegetables. Tomatoes and potatoes eighth, onions sixteenths. Remove the stem and seeds from Aji. Chop finely. Finely chop the garlic.
  2. Heat the frying oil. Fry the potatoes into French fries.
  3. Heat 4 tablespoons of oil in a wok. Sauté the sliced beef in portions (sauté) and season with pepper, paprika, cumin and oregano. Only add salt at the very end. Then set the meat aside.
  4. Fry the onions with the garlic and chilli peppers for 2-3 minutes and pour in the red wine and red wine vinegar. Add tomatoes and fold in carefully.
  5. After another 2 minutes, return the meat to the wok and mix with the vegetables. Finally, add the french fries to the wok and fold in as well.
  6. Serve immediately.
