Ingredients

  • 200 g penne riate or similar pasta
  • 4 medium potato (s)
  • 200 g hard cheese (e.. Gruyère), rated
  • 200 ml cream (sweet cream)
  • 4 onion (s), cut into rings
  • salt and pepper
  • Clarified butter

Instructions

  1. Slowly roast the onions in a little clarified butter in a frying pan over medium heat, turning occasionally.
  2. Peel the potatoes and cut into cubes, bring to the boil in a large saucepan in plenty of salted water. After 3 - 5 minutes add the penne and cook together until the penne is al dente. Pour off the cooking water. Add the grated cheese and cream to the pasta and potatoes and stir so that the cheese melts. Season to taste with pepper and, if necessary, salt.
  3. To serve, sprinkle the golden brown onion rings over the alpine macaroons.
  4. Traditionally, Älplermagronen are served with applesauce or apple compote.
